Chef Pui Teng is a professional chef with more than 7 years of pastry experience and has extensive experience in French pastry and sugar display. She has recently won the Asia Pastry Cup in December 2022 and, represented the Malaysian team that ranked 6th in the Coupe Du Monde De La Patisserie 2023 in Lyon, together with her team member Chef Charles. Both of these chefs are representatives of APCA. They have also won the Best Taste award at the Asia Pastry Cup 2022. She believes that being a chef allows her to be more creative.
Chef Frederic Moreau started his career 1992 working for a local bakery and then worked in Paris for Chef Nicola Bussa.
For the next few years, he gained experience different regions of the globe which includes Paris, Tokyo and USA and gained immense experience in the subject of pastry making.
He has worked for the Edward Notter School in Orlando, Florida; as in-charge of the development of the Pastry Programs.
Chef Ajay has been the Executive Chef at the Westin Mumbai Garden City, responsible for the food and beverage operations of the hotel which includes ‘Prego’ the finest Italian restaurant in Mumbai. He has crafted a rich and diverse menu incorporating signature SuperFood elements.
With his culinary creativity and true passion for food, Chef Ajay Chopra has worked with some of the most prestigious names around the world like Gordon Ramsay and Angela Harn.
Chef Soriano Joaquin has worked many years in Michelin restaurants. He has experiences in Le Meurice, Alléno Yannick, and Alain Ducasse in Paris, Grand Hôtel - Park 45 in Cannes, and Relais Dessert Pastry Shop "Luc Guillet". He has been interviewed on multiple occasions by the renowned French desserts magazine “Le Journal du Pâtissier”. In 2012, he won the Championnat de France du dessert in the category of macarons.
Born in France, Christophe comes from a family of pastry chefs. At a young age, he took classes and became a pastry chef and chocolatier. His passion for chocolate and his knowledge of blending flavours, coupled with his talent and creativity propelled him into the limelight.
Recipient of numerous honours such as the Grand Prix Canadien de la Chocolaterie in 2003 and the Coupe du Monde de Pâtisserie de Lyon in 2005, he continues to dazzle the eye and treat the palate.
Martin Lippo is currently the head of Vakuum in Barcelona, a cutting-edge laboratory for experimental cuisine and teaching. At age 27, he was voted “most creative young chef” and also best “Author chef” in a new section, “Post-modern cuisine”, in Argentina’s leading food magazine. He began to teach people to cook, focusing on doing more with less. In 2000, Martin moved to Barcelona, where he began to break down the barriers of conventional thinking: open to molecular cooking, as epitomized by Ferran Adrià, while drawing the best from classical professional cooking, personified by Auguste Escoffier.
Also very well known for his work with liquid nitrogen, Martin opened his center of studies, Vakuum, in Barcelona, which is a laboratory, a teaching center, a place to cook, but also to think about the world of cooking, from gourmet to more low-profile restaurants via industrial food processing.
Known for his ability to surprise with taste and texture, he passes on his know-how and experience as a chocolate and confectionery consultant and trainer.
In his career journey Chef Frederic Hawecker has won many awards and some highlighted one are Pascal Caffet Trophy (2000 – 1st prize), Sibenaler International Chocolate Grand Prix (2002 – 1st artistic prize), Best Chocolatier Confectioner Chef of France (MOF – 2007 and 2011) and other regional chocolate competitions such as Annecy, Marignane, Dijon.
